Hello and welcome to NovelFoodie!
I’ve rebranded the blog from eBookFoodie to NovelFoodie. I’ll still be posting eBook inspired recipes, family recipes and more!
As the blog transitions to the new name, you may see a few glitches or broken links and I appreciate your patience.
Why rebrand, you ask? When I first started this blog about five years ago my vision was to offer eBook cookbook design. Since then, I’ve realized that’s way too much for me to take on in addition to my full time job, family life and other obligations.
So, welcome to NovelFoodie!
I prefer tequila, but I made these martinis for my family at a family dinner with vodka. Either way, they are delicious!
How to Make Espresso Martinis Creamy & Skinny
Make these skinny martinis with instant espresso or coffee, Silk Unsweet Coconut Milk, a hint of cocoa, and tequila. The Silk UNSWEET Coconut Milk makes a great froth on top, and gives it a hint of creaminess! I found this in the refrigerated milk section. I haven’t tested other milks, but I’m sure you can substitute the Silk Unsweet Coconut Milk with your milk or cream of choice. The Unsweet Coconut Silk froths up nicely and adds a bit of creaminess without adding a ton of calories.

Silk UNSWEET coconut milk only has 40 calories per cup, and we’re only using 1/2 cup. Sometimes, I sneak 1 shot of 1/2 & 1/2 cream in for an extra creamy treat in these martinis. Especially during the holidays!
If you like rum, check out my eBook inspired recipe for a refreshing Stormy Waters cocktail! A Refreshing Stormy Waters Cocktail Recipe inspired by One Smart Witch – Book 2 of The Hollowbeck Paranormal Cozy Mysteries) by Amelia Ash and Kim M. Watt. Once you read this cocktail description you’ll want to shake one up for yourself!
TIP:
The foam is wonderful in this Skinny Creamy Espresso Martini, but it can be overflow when opening the cocktail shaker. Open the shaker slowly to avoid an overflow, or combine all the ingredients in the blender until blended and frothy. Pour the liquid from the blender into the cocktail shaker with ice. Shake the drink gently until chilled, strain it into the martini glasses and top with the foam. If you have a pour through shaker top, remove the top and spoon the foam over the martini.
My WordPress recipe plugin shows this skinny espresso martini to have 155 calories. The MyFitnessPal app calculates 146 kcal, 2g fat, and 16.6 g Total Carbohydrates.
