I’ve been told several times to try a grain bowl from Panera. I like Panera for lattes, breakfast soufflés, and pastries, but lunch? No thank you. But I was intrigued by the Mediterranean grain bowls. I haven’t had one yet, but did some searching on Pinterest. It had blueberries and quinoa and looked amazing. I went to my fridge and threw everything I had (well, not everything) in a bowl, and voilà, a “grain bowl” was born!
Grain Bowls are easy and so delicious

I made a spinach salad with a variety of rice and quinoa warmed and mixed in. I topped it with fruit, walnuts, and a mixture of tahini, lemon juice, and Greek yogurt. Most of the ingredients were leftover from a stuffed sweet potato with spinach and chickpea dinner from last week. It was so good that I went home and created an even better grain bowl for dinner!

For dinner, I added some warm quinoa and rice blend, spinach, avocado, warm rotisserie chicken, parmesan & quinoa crisps, raspberries, blueberries, walnuts and drizzled a tiny bit of tahini and a tiny drizzle of Garlic Expressions to finish it off. These grain bowls are great because you can add whatever you want and however much of each ingredient you like. If I had more quinoa or some farro cooked, I would have warmed it up and added it too!

With all the fruit, avocado, and the nutty flavor of the quinoa and brown rice, you could go without dressing in this grain bowl, but Garlic Expressions adds a little zing! Garlic Expressions is a salad dressing made in Perrysburg, Ohio so it’s much cheaper here in Toledo than online, but if you can find it at your grocery store, grab a bottle!

Funniest Food Post EVER! Dinner Roulette!
Finally, I promised you a funny blog post.
I never said I wrote it, but here it is. I found it on WordPress reader and laughed my fool head off. It’s Dinner Roulette from blablablog.org. I’d be lying if I said I couldn’t relate to this post because like anyone else, I’ve had bad days in the kitchen! Enjoy! It’s one of the first blog posts I ever read on WordPress reader and I still laugh about it after over a year. If this doesn’t make you laugh, I don’t know what will! This funny lady hasn’t posted in a while but I’m hoping for more from her! I must admit, some nights I’d love for “Jill” to come over and “relax me up a dinner” too!
