If you grew up on egg salad with diced pickles and if you are an olive lover like me, you will love this egg salad with olives. I use pimento-stuffed green olives or kalamatas! It's so easy! All you have to do is mix up chopped boiled eggs with some olives, olive oil, and mayo and you're DONE!
¼cupolivesAbout ¼ cup pitted, sliced/chopped. I like the green Spanish Olives with Pimento or Kalamata Olives. (low sodium olives are okay, but you may need to add more herbs/spices to make up for the lack of salt)

Instructions
Chop or dice your peeled, boiled eggs and place them in a medium bowl.
Stir all the ingredients together and it's ready to serve. *For extra olivey egg salad, add 1 tbsp of olive brine!
Notes
Some people use Miricle Whip. I don't recommend it with this recipe.
As always you can modify this recipe to make it your own. Add diced celery if you would like, or add Greek yogurt, or more mayo.
